Course Description: Role of nutrition in health promotion and disease prevention. Current concepts, controversies, and dietary recommendations from a scientific perspective. (Formerly numbered Nutrition 204.)

Raquel's Course Reflection:

Fundamentals of Nutrition (Nutrition 201) is a general, entry level course offered at San Diego State University. As a first-year student, I learned a great amount of health promotion techniques and the importance of disease prevention. Prior to this course, I had basic knowledge of cross contamination, the importance of proper storage, and recalled only a few nationwide instances of foodborne illness outbreaks. This course exposed a new world for me and opened my eyes about the daily dangers involving poor food handling and how oblivious we as consumers can be regarding some of the basic dangers of food care.

This online course allowed me to focus my time directly to the subjects, the lectures, and the readings. I quickly learned that many of the lectures and readings required my full attention and dedication as I know this material will carry on with me for the next four years. Personally, I believe this class served many purposes for me because of my interest in entering the food service workforce. Throughout college, I believe it is important for nutrition majors to get involved with the food production or the food service industry. It teaches you a lot about food regulations and critical information regarding food handling and food service.  

Overall, I greatly appreciated this course and the material matter that was taught. This course will serve as a useful foundation for not only my future nutrition classes, but for my personal knowledge and experience with food handling.
