Course Name: Experimental Food Science (3)

One lecture and six hours of laboratory.

Course Description: Application of principles and methods of physical and sensory evaluation and food component analysis to conventional and fabricated foods; effects of additives and ingredient variations; project studies; data interpretation and report writing.

Raquel's Course Reflection:

Nutrition 405 is also known as the Experimental Food Science and Technology Laboratory. This section exists cohesively with Nutrition 401 lecture, otherwise known as Advanced Science of Food. The required time allotted for this section is abruptly 6 hours per week. The section overall covered applications of principles and methods of physical and sensory evaluations, as well as food component analysis from conventional to fabricated foods. We analyzed the effects of additives and ingredient variations, as well as project various studies and interpret both data and report writing.

 

My favorite part of the course was developing my very own food product. This was the third project of the semester and was the most exciting project I have come to develop throughout my career as a student. I created a “date-night cookie” that was an original peanut butter cookie. The only difference was that the original peanut butter cookie recipe incorporates usually either brown, white, or cane sugar. But I successfully was able to substitute the sugar with a date puree to increase the overall fiber of the cookie, and lower the overall content of fat, sugar, and calories.

 

I gained an immense amount of knowledge and insight regarding the science, research, and corporate challenges behind creating a brand new food product. The hands on nature of this laboratory allowed me to utilize my acquired nutrition knowledge, experience, and creativity during each class. I enjoyed testing various products, performing and analyzing nutritional tests, and learning how to operate the laboratory equipment offered in class.
