Course Name: Advanced Food Science (3)

Course Description: Physical, chemical, nutritional, and functional properties and quality attributes of foods and food additives; food handling, changes and interactions of food components induced by processing and storage; food laws, regulations, legislation, and food safety issues.

Raquel's Course Reflection:

Advanced Food Science has helped me gain a greater appreciation for food science and has helped open my eyes to possible alternatives in the profession of nutrition besides clinical dietetics. I learned and studied the principles behind water activity, viscosity, Newtonian fluids, Non-Newtonian fluids, meat tenderization, and lipid oxidation. With these topics in particular I was able to further my understanding of these concepts because prior to this course I had very little knowledge about the various types of fluids or even about meat tenderization techniques. Understanding the physical, chemical, nutritional, and functional properties and quality attributes of foods and food additives is extremely important in this profession. Learning about food handling, changes and interactions of food components induced by processing and storage; food laws, regulations, legislation, and food safety issues will allow me to utilize my knowledge and apply it as a future Registered Dietitian Nutritionist. Having this basic knowledge and understanding within the field of food science makes me applicable and more credible than those nutritionists who did not pursue a bachelors of science degree in nutrition.

 

This class did not acquire individual assignments or projects as part of our overall grade, but only weighed and took into account the scores of our three exams. I did not do as well on the first exam as I had hoped, however I was able to redeem myself and undo the self harm I had inflicted on my grade via the second exam. My score on the second exam represented my hard work and dedication in the class. It was a learning lesson for me to continue trying and asking for more help when I needed it because by the second exam I had made a drastic improvement in regards to my grade in the class.

Professor Changqi Liu was very patient and understanding to his class and our needs as students. This semester was only his second semester teaching this course. He shared that he was also learning along with his class and altering things that worked well or did not work well. His patience and adaptability helped me better understand the material. Although I may have had a difficult time adjusting to the class material in the beginning of the semester, I overall truly enjoyed this class and the professor teaching it. I do believe the topics taught in this course can be challenging, but with a professor like Changqi Liu, it was easy to remind myself of why I love this major as much as I do and why I want to continue pursing a career as a health professional.
