Course Description: Managerial functions in food service systems.

Raquel's Course Reflection:
Food Systems Management (Nutrition 404) is a similar course to Quantity Food Production (Nutrition 303), but focuses more amongst the managerial functions in the food service systems. Many students take Nutrition 303 cohesively with Nutrition 404, however I decided to enroll in Nutrition 404 one semester after my 303 course. Within Nutrition 404, we also focused heavily on the food systems model which encompassed the input, the transformation, and output segments of food service operations.
Similar to 303, 404 required a semester long project where we as the students had the opportunity to implement and incorporate what we learned in lecture into a food service operation project (Also known as the 'Business Plan'). My group created a gourmet ice cream truck that traveled to various farmers markets located throughout San Diego. I enjoyed creating the products and researching the components of my imaginatory business because of my enhanced confidence, skills, and knowledge that carried over from 303.
Compared to criticism from previous nutrition students that have already completed Nutrition 404, to my surprise I far more greatly appreciated and enjoyed this course and this segment of food systems management than I had originally expected. Nutrition 303 was foreign to me when I originally enrolled, but thanks to what I learned from this course, I felt more familiar with the material covered in 404 and enjoyed going into further detail amongst the various topics. I believe this class and the material I obtained will carry me a long way in my Nutrition career, and will be a pleasure to dwell into once I begin my DI rotations.
